Harvest
As the harvest season unfolds, we meticulously select each ripe cherry by hand, guaranteeing only the finest quality beans for our customers.

Process
Within 24 hours of harvest, our cherries embark on a transformative journey, delicately floated and pulped before embracing a 24-36 hour fermentation and a gentle washing – a meticulous process that guarantees the pinnacle of flavor development.

Dry
Beneath controlled light, our coffee beans are tenderly dried, shielding them from the harshness of high-intensity light stress. Our diligent producers hand-sort each bean, ensuring that every batch is free of defects.
Coffee Processing the FMI Way
Hand Picked, Always.
Green cherries are unripe, and can cause unsatisfactory flavor profiles. Our commitment to machine free harvesting ensures we only harvest red cherries, starting the journey for consistently delicious flavor profiles.
Hand Sorted, Always.
Even a red cherry can have defects, which is why a float test is critical. Any floating cherries are defective, and promptly removed.
African Raised Beds.
African raised beds allow us to monitor the moisture content of the cherries, turn them as needed for an even drying process, and it allows us to cover the cherries in the event of rain.
AA Washed Arabica.
AA beans are the largest screen size and highly desirable for their acidity, fruity flavor notes, and body. They are regarded as the gold standard of specialty coffee beans.

Insured Logistics.
Ensuring coffee reaches the Mombasa shipping port can be a challenge. Thieves, political conflicts, and scam artists present a direct threat to our industry. Our partnership with the Kenyan and Ugandan governments, and a strong insurance policy ensure our coffee reaches the ports uninterrupted.
